| Salsa Chicken Saute' | ||||||
| 1 Tbsp. oil 1 onion cut into thin wedges 1 medium bell pepper cut into strips 1 1/2 cups thick & chunky salsa Saute' chicken in oil in skillet over medium heat for 3 minutes. Add onion and pepper and cook 3-4 minutes until tender and crisp. Reduce heat, add salsa and simmer for 2 minutes. Serve over rice. Makes four servings. Contributed by, Elaine Cunningham |
