Potato Casserole
3/4 cup and 1 tbsp. and 2 tsp. chopped onion
3 1/2 cups sour cream
1 3/4 (10.75 oz) cans condensed cream of chicken soup
3 3/2 cups shredded Cheddar cheese
1 3/4 (2 lb pkgs frozen hash brown potatoes, thawed
3 1/2 cups crushed potato chips
3/4 cup and 1 tbsp and 2 tsp melted butter

Preheat oven to 350 degrees. In large mixing bowl, combine onion, sour cream, soup, cheese, salt and pepper. Press the excess water out of the hash browns and then add them to the soup mixture and mix well. Transfer to a 9x12 inch casserole dish. Sprinkle chips on top and drizzle with butter. Bake in preheated oven for 45 minutes-1 hour, until golden brown.
Makes 12 servings.
