Lemon Bars
For Crust:
2 cups flour
1/2 cup sugar
1 cup (2 sticks) butter, softened

For Filling:
1 1/4 cups (14 oz. can) Sweetened Condensed Milk
4 lg. eggs
2/3 cup lemon juice
1 Tbsp. flour
1 tsp. baking powder
1/4 tsp. salt
4 drops yellow food coloring (optional)
1 Tbsp. grated lemon peel
Sifted powdered sugar

CRUST: Combine flour & sugar in med. bowl. Cut in butter with pastry blender or two knives till mixture is crumbly. Press into bottom and halfway up sides of ungreased 13 x 9 inch baking pan. Bake for 20 minutes.

FILLING:
Beat sweetened condensed milk and eggs in large mixer bowl until fluffy. Beat in lemon juice, flour, baking powder, salt and food coloring just till blended. Fold in lemon peel; pour over crust..

Bake for 20-25 minutes or till filling is set and crust is golden brown. Cool in pan on wire rack. Refrigerate for 2 hours. Sprinkle with powdered sugar; cut into bars.
Makes 4 dozen.
