| German Potato Salad This recipe is mostly "add by taste". I will give you the basics, and you can add on according to your taste. This is another tried, true and wonderful recipe. I have yet to find a potato salad that I love as much as this one! 3-4 lbs. red potatoes- boiled, peeled and sliced (not cubed). 1/2 green pepper or red pepper, diced (or a 1/4 cup of each) 1/2 cup celery, chopped 3/4 cup onion, chopped 4 slices of bacon, cooked crisp, drain and reserve all but a little bacon grease. Set aside remaining grease. 1/2 tsp. EACH of salt, pepper and celery seed 1/2 cup vinegar mixed with 1/2 cup water in sauce pan. 1 Tbsp. of Cornstarch (can use a dash more if necessary) Sugar-to taste. Add salt, pepper and celery seed to prepped potatoes. Pour the bacon grease which you sat aside, over the potatoes. Add the cornstarch, vinegar and water, and sugar, to grease left in frying pan. Stir to boiling. (Taste to see if you need to add sugar). Pour over potatoes and stir all ingrediants gently. Leave at room temperature if eating within a few hours. Refrigerate. Can reheat or eat cold. |
