Bean & Ham Soup
1 lb. Great Northern Beans                                       3 stalks celery, sliced
3 carrots, peeled and shredded                                  1 medium onion, diced
2 medium potatoes, peeled and diced                        2 cups cubed cooked ham
7 cups water

Place the beans in crockpot with enough water to cover, and soak 6-8 hours, or overnight. Drain the beans, and return to the crockpot. Cover with the 7 cups of water, and mix in remaining ingredients.
Cover and cook on high for 3 1/2 hours. Switch to low, and continue cooking for at least 6 1/2 hours. 
Makes 8 servings.
