Emulsification of Fats

 

Problem:  Which substances emulsify Fats?

 

Procedure:

                Step 1.  Clean 5 test tubes and label them A, B, C, D and E.

                Step 2.  Into each test tube place 5 ml of water and 10 drops of fat.

                Step 3.  Add the following

                                A - nothing

                                B - 4 drops detergent

                                C - 4 drops lemon juice

                                D - 4 drops alcohol

                                E - 4 drops bile

Step 4.  Cover with thumb & invert 6 times.  Let stand 2 - 3 minutes.

                Step 5.  Look at the line between the water and oil.  Rate each test tube as distinct or fuzzy.

Read newspaper through each test tube of solution.  Rate the solution as clear, slightly fuzzy or very fuzzy.
