The Jedi are one of the oldest orders in the galaxy going back to before 5000 BBY.
The Jedi were wiped except for two, Obi Wan Kenobi and Master Yoda. Obi Wan and Yoda went into hiding. Obi Wan watched after Anakin Skywalker's (Jedi who turned into powerful Sith Darth Vader)son Luke Skywalker on Tatooine. And Master Yoda lived on a Outer Rim planet called Dagobah.
The Sith, Emporer Palpatine(aka Senator Palpatine, Darth Sidious) and his apprentice Darth Vader took control of the Old Republic and turned practically all the planets in the republic into a part of their Empire. The Imerials were not very nice to common people and so a rebellion started.
The Emporer was REALLY peeved and he shot electricity from his fingers into Luke. Luke was lying on the floor screaming from pain of the electricity. Darth Vader saw his sons pain and he decided to save his son. Darth Vader lifted the emporer up and threw him into the core of the Death Star. The emporer was dead and Darth Vader was dying. The rebels managed to blow up the Death Star and Luke only just made it off alive and he brought his fathers body with him.
Luke Skywalker had many loves in the Galaxy, but finally he found one that felt the same way back. Mara Jade, Red Hair, Green eyes and according to my friend Chelsea shes funny. I think she stole my personality. I don't like her.
A Jedi fights only as a last resort. If you are forced to draw your lightsaber, you have already ferfeited much of your advantage.
The Jedi are not a race, they are a order of races so they dont really have a defined biology. But there is one biological aspect that makes all the Races of the Order somewhat the same.
The exact way the Jedi light sabre technology works is unknown but the basic operation is known. The Jedi Power Cell and all other needed components is kept in a 20 to 30 centimetre handle. When a Jedi turns on a lightsabre an enormous amount of controlled pure energy flows from the power cell and out. A series of multi-faceted crystal makes sure the energy converts in to a tight parallel beam. Every lightsabre is unique and they the frequency of the energy can be modified to change the feel of how the blade cuts, when it contacts another blade, when it deflects a blaster or Force shield. The Frequency of an individual lightsabre can be determined by the colour of the blade or the pitch it hums when it is activated. Lightsabres require one to three crystals for the blade frquency to be modified.
If a Lightsabre has only one crystal it has a fixed blade length. Other lightsabres with multiple crystals, the crystals can be shifted to allow changes in the length of the blade. The blade length can be altered by rotating or separating the crystals. The best lightsabres are the ones made from natural crystals. But the jedi can forge those crystals with just a few simple elements and a small furnace.
A Jedi can deflect blaster bolts by parrying. But if you have 40 people shooting at you at once, you kind of have a slight problem. So the Jedi invented a light sheild.

They had the common enemy, The Sith. Most of the Sith are Fallen Jedi. A fallen Jedi is a Jedi or padawan that succumb to the Dark Side of the Force.
Sith Exar Kun Sith Lord ordered for all the Jedi to be killed around 3996 BBY. The Jedi fought back. The battle was stretched out for many years. Finally the peak of the Jedi and Sith wars was reached and the Jedi triumphed by killing Exar kun and trapping his spirit in a temple in Yavin 4. The Jedi thought that would be the last of the Sith forever.
The Sith returned at an unknown time. But this time there would only be two Sith at a time, a Master an an Apprentice. 32 BBY the Sith revealed their presence to the Jedi on Tatooine when Darth Sidious's Apprentice Attacked Qui-Gon Jinn and their friends. The Sith had many minions and the Jedi (with the Old Republic Army) was fighting them all through the clone wars, The Old Republic Vs The Trade Federation.

Luke Skywalker, his twin sister Leia Organa of Alderaan, Han Solo, Chewbacca the Wookie and their droids joined the Rebellion. Skipping the first Death star events and Darth Vader confessing hes Lukes father, we'll get straight onto Endor shall we?
The empire was building a second Death Star in orbit of a small isolated moon called Endor. The rebellion send out a small squad to lower the force sheild around the Base so the Rebel Fleet can blow it up. The Squad was a small group of rebel soilders, Commander Luke Skywalker, General Solo, Chewbacca, Princess Leia and of coarse that irritating droid, C-3p0 and the ever funny R2-D2.
The Squad was delayed at lowering the force sheild and Luke Skywalker was taken by Darth Vader before the Emperor on the Death Star.
Emperor Palpatine was trying to encourage Luke to the Dark Side. Luke wouldn't give in. But his hate was swelling. Darth Vader discovered that Luke had a sister and used that against Luke to make him very angry. Luke attacked him with his lightsabre, not giving in he pushed Vader down and cut off his hand, Just like Vader had done to him. Luke realised what he had done, it was the path to the dark side, he put aside his lightsabre. The emporer thought he had one. Now for the Dialogue.
"You failed your highness, I am a Jedi like my father before me," said Luke
"So Be it Jedi. If you will not turn, You will Die." said Palpatine, or something like that, I haven't watched ROTJ in AGES well 2 weeks ago but thats not the point.

After fixing alot of the loose ends that surrounded killing the emperor and wiping out remaining forces, Luke Skywalker settled down and started a new Jedi Order that didn't follow all the old rules. Leia and Han got married and had three kids. Anakin, Jacen and Jaina. Anakin, Jacen and Jaina are being trained as Jedi by Luke.

Here is the ways that the Old Jedi Order Jedi were ment to live by.
A Jedi must be aware of her/his environment, but must not let it affect her/him in ways she/he does not desire.
The training of a true Jedi doesn't come from listening to lectures.
There is no try.
Patience can be as strong an ally as any weapon.
Even during times of peace, a Jedi Knight should never allow himself/herself to relax and grow weak.
There is no emotion; there is peace. There is no ignorance; there is knowledge. There is no passion; there is serenity. There is no death; there is the Force.
Every living thing strengthens the Force, and everything draws strength from it.
A Jedi feels no heat or cold. A Jedi can extinguish pain.
A true Jedi rarely uses a lightsaber to settle dispute. It is better to out think and outmaneuver your opponent.
Beware the dark side.
A Jedi could never be helpless since the Force comes from all living things.

A Jedi trusts the Force and at first seeks other ways to resolve problems: patience, logic, tolerance, attentive listening, negotiation, persuation, and calming techniques.
There are many times when a Jedi must fight.
A Jedi should use all available skills and resources.
Once you build it, a lightsaber will become your constant companion, your tool, and a ready means of defence.
A Jedi must act when she or his is calm, at peace with the Force.
A Jedi can wait as long as neccesary.

A jedi is always serious. They always must have the clearest of minds.
Love is risky for a jedi, because they could turn to the dark side, that's why it is forbidden.
The Jedi are not allowed possessions. except the clothes they wear and their lightsabre. But when Obi-Wan was a Padawan he had a room full of models of space craft and technology.
The Jedi are not bias towards anyone. Except the sith. They always have an open mind. They do not make any conclusions until they have all the evidence.
All Jedi have a unique quality about them.

Obi Wan Kenobi: The most calming Jedi
Luminara Unduli: She uses the Force in battle to sync up with her enemy so she never makes a mistake.
Barriss Offee: The ability to heal almost all ailments using the Force.
Luke Skywalker: The ability to become angry and use the odd dark power with out turning to the dark side. I'm sorry if that is incorrect but it seems that way too me.
Master Yoda: He is the most powerful Jedi, he has all the skills the above Jedi have and he is half their height.

The Force is, well a force. It surrounds us and binds us. All living things are effected by the force, even if they have no ability to control it.
A creatures ability to control the Force comes from the level of midi-chlorians in their cells. Midi-chlorians is a "living thing" that lives inside everything living. A high amount of Midi-Chlorians shows that they have a large amount of potential to use the force. Master Yoda has the highest amount of Midi-Chlorians and that made him an extremely powerful Jedi dispite his size.
When Qui-Gon Jinn discovered Anakin Skywalker they found that Anakin had a higher amount of Midi-Chlorians than master Yoda and the Jedi got upset because they thought that he would be the one the prophecy said would bring balance to the Force. After falling in love with Padme Amidala, and having two children, Anakin eventually turned to the darkside. He did bring balance to the force.

The blade is projected from a positively charged energy lens at the center of the handle. The Blade then curves back down into a negatively charged disc that also acts as a hand guard. The arching blade has amazing strength.
And then there is a bunch of wierd technobable that even I don't undertand! Now that's wierd!
It has the same basic principals as the lightsabre, except instead of the converging focusing lens they have a diverging lense and the negativly charged high- energy flux aperture is largened to cover the whole handle. This makes the blade splay out instead of the parallel beam. The Blade can curve up to 170 degrees angle but it cannot make 180 because it is against all the laws of optical physics. Also most of the time there are controls to alter the increase power and to change the angle the sheild is at.
When going for the lightsabre handle on a Jedi utility belt one must becareful not to activate the lightsheild by accident, because if the angle was slightly wrong and the handle was held the wrong way...I think you get the idea.
Also imagine one of these sharp edge flying towards you, propelled by the force.
There is also a modification of a Light Sheild. It is made so that the handle is paralell to the face of the shield, making it look medi-evil. The face of the blade is larger, but it is easier to use. With the new design the handle has changed making it almost impossible for mistakes to occur when one thinks they are drawing their lightsabre. The modified versions are also much lighter and weigh similar to a lightsabre.
The Jedi robes are made from special thermo technology that keeps one at the perfect temperature nomatter what the outside heat.
They also have VERY long range comlinks that can be picked up by ships and other races/organisations comlinks.
They have variations of Light torpedos and light missiles. It's the basic engineering of a lightsabre except they are projectile and much heavier.
The Jedi have a very detailed archives of everything in the galaxy. They have records that go back thousands of years, all the planets in the galaxy and the inhabitants and the planets stats.
