| Green Beans Italienne (8 servings) 3 tbs. olive oil 3 cloves garlic, minced 1 medium onion, thinly sliced 6 plum tomatoes, peeled, seeded and chopped 1 8 oz. can peeled tomatoes, drained 1 tbs. balsamic vinegar 1 tsp. oregano 1 tbs. fennel seeds 2 tbs. minced flat leat parsley � tsp. hot red pepper flakes salt and freshly ground pepper to taste 3 9 oz. packages frozen Italian (flat) green beans (available at Dominick�s or OMNI) 1. Saut� onion and garlic in olive oil until golden. 2. Add other ingredients except for beans, simmer 15 minutes until thickened and somewhat reduced 3. Add frozen green beans and turn heat to high until they are thawed in the sauce. Reduce heat and simmer 5 minutes until cooked through. |

| Easy Rice Pilaf (4 portions) 1 cup white rice (not instant or converted) 1 tbsp. butter or vegetable oil 1 large shallot, minced, 1 medium carrot, finrly diced, 1 medium celery stalk, finely diced 1 14 oz. can chicken or vegetable broth � tsp. dried thyme salt and pepper to taste � cup minced flat leaf parsley 1. Heat butter or oil in a heavy 2 quart suacepan and saute shallot, carrot and celery until softened, about five minutes. 2. Add rice and continue sauteing about 2 minutes, until rice start to turn transparent. 3. Add broth, thyme, and salt and pepper. Bring to boil and stir. Reduce heat to a simmer, cover and cook for 15 minutes. 4. Remover from heat and rest, covered, for five minutes. Stir in parsley and serve. |
