| Pi�a Colada Jello Shots (fun for a party -- about 45 shots) 3 packages pineapple flavored gelatin 1� cups boiling water 1 16 oz. can coconut milk or coconut cream 1 cup light rum flaked coconut (optional) 1. Dissolve gelatin in boiling water. 2. Add coconut milk and run and stir. Some particles of the coconut milk will not dissolve. 3. Ladle into 1 oz. platsic shot glasses, putting some of the undisslved coconut into each (it will make a froth at the top). Sprinkle with flaked coconut if desired. 4. Chill about 3 hours, or until gelatin has set. |
