Peppermint Tea

Peppermint tea acts as a stimulant and is recommended as a prevention against colds. Infuse 1 teaspoon of dried leaves and tops in
1 covered cup boiling water for 10 minutes. Strain and flavour with honey to taste.

Spearmint Tea

Spearmint is the popular garden mint, with crinkly spear-like leaves, used in cookery. A delicious tea can be made of the dried
leaves alone, in the same way as peppermint tea, or they can be mixed with one of the China teas.

Apple Mint Tea
The dried soft grey-green leaves of the apple mint make a distinctive tea alone or in combination with other herbs. This mint which
smells strongly of apples makes a refreshing tea on hot days.

Rose Hip Tea

Cut hips in half and remove seeds, stems and whiskers. Chop or crush them in a blender and dry before storing in an airtight
container until required. To make the tea, use '/2 teaspoon of the crushed hips to a cup of boiling water; steep for 5 minutes
until the colour is bright pink. Add sugar, honey or lemon. Try with cloves and cinnamon stick stirrers.
