MAIN MEALS







CHILLI CON CARNE

2 beef stock cubes
1Teaspoon chilli powder
1/2 cup dry red wine
1 bayleaf
salt, pepper
315 g (10 oz.) can red kidney beans
750 g (1 1/2 lb.) round steak
2 tablespoons oil
2 medium onions
1 clove garlic
250 g (1/2 lb.) tomatoes
1 1/2 cups water

Trim meat, cut into small cubes. Heat oil, cook meat until well browned. Peel and finely chop onions, crush garlic, add to pan, cook 2 minutes. Skin and chop tomatoes. add to pan; cook.stirring, 5 minutes. Blend water with chilli powder, add to pan with crumbled stock cubes, red wine. bayleaf, salt and pepper Bring to boil, reduce heat; simmer, uncovered, 1 to 1 1/2 hours, or until nearly all liquid has evaporated. Add Undrained kidney beans, continue cooking until sauce thickens, approximately 15 to 20 minutes. Serve with rice.
Serves 4 to 6.
