Chicken Tortilla Soup
4 Cups of Fat Free Chicken Broth
4 Cups of Water
1 Can 98% Fat Free Cream of Chicken Soup
1 Can Rotel Tomatoes
1 Cup Skim Milk
12 oz. Light Velveeta Cheese
1/4 Cup Sauteed Onions
1 tsp. Garlic powder
1 tsp. Chili powder
1 tsp. Salt
1/2 tsp. Black pepper
3 flour (low/no fat) flour tortillas torn in small pieces

Boil chicken in water/broth 'til tender.  Cut into bite size pieces and return to broth.  Add remaining ingredients except tortillas.  Boil 10 minutes, then add tortillas.  Boil until tortillas are soft.  10 - 15 mins.  Stir often, soup will stick.  Soup is a bit spicy so you might want to adjust for your family's taste by reducing the chili powder and black pepper.  It is also a bit thinner than a lot of soups.  You can thicken with a bit of cornstarch.  Mix part of the cooled broth with a teaspoon of cornstarch making a paste and whisk into the broth to thicken.
