What to do with Herb Jelly

Use to baste roasts - basil is good on pork, rosemary on beef, sage on Chicken

Mix with butter to put on your vegtables

Add a tablespoon or so to your soup

Have it with cream cheese on crackers

Smear it on your roast beef sandwhich

Use Lemon herb and mint jellies to sweeten your tea

Mint jelly on Ice cream

Here are some combinations I used with what I'm growing--use your imagination - You can use this basic recipe with any fresh herb. Pick a big bunch and throw it in there--stems and all.

 

Cinnamon Basil Jelly

 Good on Pork Roast or Ham

 1 large bunch of cinnamon basil

(you can use regular basil, but this is what I was growing and decided to enhance it with some real cinnamon.)

 2 cups Water

1/2 Cup white vinegar

1/4 cup rice vinegar

1 T lemon juice

1/4 tsp cinnamon

2 pouches liquid pectin

6 cups sugar

 

Boil basil, water, lemon juice and vinegar in large pot (need extra room for it to boil up). When it comes to a solid boil, add sugar and bring to a hard boil. Add liquid pectin. Add Cinnamon. Bring to a second hard boil. Boil for one minute. Ladle into hot jars and water bath for 10 minutes. May take a couple of weeks to set properly.

Other Combinations

Use 1 cup wine and 1 cup water instead of 2 cups water. White or red-depending on what combinations you like

Add garlic

I had some applemint and used applejuice for the liquid - good on pork roast
