Tamale Pie



When I make this recipe, I increase the ingredients
three or four times and make pies for all my family and a shut-in
or neighbor. It's fun to make. The recipe goes back many years ago
and always evokes pleasant memories.

2 cups cornmeal
1 cup cold water
2 tsp. salt
3 pints boiling water
1 onion thinly sliced
2 Tbsp. Margarine
1 pound ground beef
1 cup tomatoes,
2 green peppers
1 tsp salt
1 tsp. Chili Powder(red pepper if desired)
3/4 cup cheese
Stir cold water in the cornmeal slowly to make a smooth paste.
Add salt, boiling water. Cook over low heat in a very heavy pot,
stirring constantly until quite thick. Then place
over hot water or turn heat very low, cover and continue to cook for
45 minutes until cooked through. Brown onions lightly in melted margarine,
add ground beef, stir until brown. Add tomatoes, Chili Powder,
cover and simmer 25 minutes. Cut peppers into long thin
slices and add to sauce mixture. Line side and bottom of baking
dish with hot cornmeal mush. Pour in the sauce. Put a thin
layer of Cornmeal mush over top like a pie crust. Top with
grated cheese. Bake at 350 degrees for 25-30 munutes until
crust is a very light golden color.
