5 1-OZ. SLICES AMERICAN OR SWISS CHEESE
4 EGGS
2 CUPS MILK
1/2 C. SLICED GREEN ONION
2 TSP. PREPARED MUSTARD OR DIJON-STYLE MUSTARD
PAPRIKA

IN A GREASED 8X8X2 INCH BAKING DISH, LAYER 8 BREAD-SLICE HALVES,
THE CHEESE SLICES, THEN THE REMAINING BREAD-SLICE HALVES.
BEAT EGGS; STIR IN MILK, ONION, MUSTARD, 1/4 TSP. SALT AND 1/4 TSP. PEPPER.
POUR OVER BREAD AND CHEESE LAYERS. SPRINKLE WITH PAPRIKA.
COVER; CHILL IN REFRIGERATOR FOR 2 TO 24 HOURS.
BAKE UNCOVERED IN A 325 DEGREE OVEN FOR 45 TO 50 MIN.
OR UNTIL SET AND LIGHTLY BROWNED. LET STAND 10 MIN. SERVES 6.

EXCEPT LAYER 1 CUP CHOPPED COOKED BROCCOLI
OR CARROTS ATOP CHEESE SLICES
MEAT CHEESE STRATA: PREPARE AS ABOVE
EXCEPT LAYER 1 CUP DICED COOKED HAM OR CHICKEN ATOP CHEESE SLICES.
