These were wartime recipes. 2 cups diced cold cooked potatoes 1 1/2 cups medium white sauce Salt and Pepper to taste Combine potatoes and white sauce and heat thoroughly. Season with salt and pepper. Serves 6. Medium White Sauce 2 tbsp. butter or other fat 2 tbsp. flour 1 cup milk 1/4 tsp. salt 1/8 tsp. pepper Melt butter, blend in flour until smooth. Add milk gradually, stirring constantly until boiling point is reached. Reduce heat and cook 3 minutes longer; add seasonings and blend. Pour over cooked and partially cooled potatoes. |
