2 tablespoons
shortening
3/4 cup flour
1/2 cup sugar
2 teaspoons baking
powder
1 egg
1/4 cup milk
1/2 teaspoon vanilla

Cream the shortening and
sugar, add the beaten egg yolk and the sifted dry
ingredients alternately with the milk. Add vanilla. Fold in
the stiffly beaten egg white. Spread one half of the mixture
in a deep greased pie pan.

Filling
1/2 cup brown sugar
1 cup chopped
walnuts
2 teaspoons cinnamon
2 tablespoons flour
2 tablespoons melted
fat

Mix all the ingredients
thoroughly and spread one half over the batter in the pan.
Add the rest of the cake batter and spread the remainder of
the filling over the top. Bake in a moderate oven(350-375
degrees F) 45-60 minutes.

I use to bake this on
Sunday mornings. The aroma is enough to pull anyone out of
bed on a cold winter morning. The recipe is from The
American Woman Cook Book dated 1943. My mother in-law gave
this book to me in 1963 when I married.
