Spring Rolls
1 lb. ground pork
1 lb. shrimp (shelled, deveined, ground)
1 chopped onion
little bit minced garlic
shredded carrots
long rice
shiitake mushrooms
egg yolks (save the whites to seal wrappers)
salt
pepper
little bit sugar
about 75 lumpia wrappers
oil for deep frying

Mix everything together and spoon about one teaspoon into the middle of a wrapper. Roll it up, seal with the egg whites, and deep fry till golden brown. Sample one to make sure the pork is fully cooked.

You can use the same filling to stuff bittermelons. Clean out the seeds first, parboil small kine, stuff it, then cook it in chicken broth till the pork is cooked.

Season to taste....some like it saltier than others.
