| There are bound
to be some people you've been dying to invite over and
impress with your culinary talents. Well, here's the
dessert to end your feast. The concept of a souffle is
enough to inspire awe all by itself--but add the rich,
orange flavor of Grand Marnier, and your ego should be
satisfied for weeks with the resulting comments. 3 tablespoons butter 3 tablespoons flour 3/4 cup milk 6 egg whites 3 tablespoons orange marmalade 4 egg yolks 1/4 cup Grand Marnier Preheat oven to 375 degrees. Butter a 1-1/2 quart souffle dish; coat the bottom and sides with sugar. Melt butter in a saucepan; stir in flour. Add milk gradually, stirring constantly with a whisk. Cook over low heat until thickened. Stir in marmalade and egg yolks, whisking constantly. Stir in Grand Marnier. Remove from heat. Beat egg whites until stiff. Fold into Grand Marnier mixture. Pour into prepared dish; bake 30 to 40 minutes, until puffed and golden. Serve immediately. Serves six. |
