and Pepper Prawns (Shanghai) |

| 4 tablespoons
vegetable oil 450 g (1 lb) uncooked prawns, peeled and deveined 2 spring onions, cut into 2.5 cm (1 inch) pieces 1 garlic clove, crushed 2 small chillis, sliced into long shreds 2 pieces star anise 1/4 teaspoon freshly ground white pepper 1/2 teaspoon Szchuan peppercorns, freshly ground 3/4 teaspoon salt 1. Heat the oil in a wok. Add the prawns and stir-fry for about 1 1/2 minutes. remove the prawns and drain on paper towels. Pour off all but 1 tablespoon of the oil. 2. Add the other ingredients except the salt and pepper. Stir-fry for two seconds, then return the prawns to the wok. Add salt and pepper and stir. Turn out onto a heated serving dish. This is very good served as a starter. |
