Pipikaula 2
1 lb. flank steak or boneless chuck roast
1/2 cup soy sauce
1/2 cup water
2 Hawaiian or 1 Thai red chili peppers, minced

Cut meat with the grain into 1-inch strips. Place in a shallow container or plastic bag. Combine soy sauce, water, and red peppers; pour over meat. Marinate in the refrigerator for at least 2 hours. Drain and arrange meat on cooling racks set on baking sheets. Dry in electric oven at 150 degrees for 7 to 8 hours or until of "jerky" texture. Meat can also be dried in an electric dehydrator following instructions, or dried in a dry box for a day, or until meat is dried, turning every 4 hours. To serve, fry in olive or peanut oil & slice across grain in bite-size pieces. Makes 4 servings.
