Pipikaula (Dried Beef)
1-1/2 lbs. beef tenderloin
2 Tbsp. salt, preferably sea salt
1/2 cup soy sauce
1/2 tsp. sugar
2 Tbsp. lemon juice

Pound to tenderize the beef and cut into pieces 4 inches long, 2 inches wide, and 3/4 inch thick. Sprinkle with salt, soy sauce, and lemon juice. Dry in the sun for several days, taking care to screen the meat from dust and flies (a screened box was traditionally used for beef and fish). Makes 3/4 lb. dried beef.
