Mango Up-Side-Down Cake
We all know what Pineapple Up-side Down Cake tastes like, but have you ever tried Mango Up-Side Down Cake? If you haven't, you're gonna wonder why. So next time don't throw out those old Mangoes....make this cake.

2 1/2 cups ripe Mangoes (Sliced)
2 tbspn. lemmon juice
1 tbspn. butter
1/3 cup brown sugar
1/4 cup shortening (Crisco)
1 large egg
3/4 cup granulated sugar
1/2 cup milk
1 1/4 cups all purpose flour
1/4 tsp salt
2 tsp baking powder

Preheat oven to 375 degrees F.

Pour lemon juice over Mangoes and let sit for approximately 15 minutes. Melt butter in a 8 inch baking pan and be sure to spread it evenly to include the sides of the pan. Sprinkle brown sugar, covering the entire bottom. Now, cover the brown sugar with the Mango slices. To make the batter mix: cream the shortening (Crisco or like substitute), add the granulated sugar and cream together, then add the beaten egg. Sift dry ingredients and add alternately with milk. Once the batter is completed, pour over the slices of Mangoes and bake at 375 degrees for 50 - 60 minutes.

When cake is done flip pan over on flat dish and remove cake so Mangoes will be facing upward. Serve while still warm with whipped cream.

If this recipe is followed according to the directions I provided, it will be the moistest and most delicious cake you have ever put into your mouth. All you have to do is listen to the ooohh's and aaaahhh's. Now aren't you glad you saved all those ripe Mangoes?
