Mango Bread Pudding
12 slices stale white bread
3/4 cup chopped dried mango, about the size of raisins (not the one with LiHing Mui)
6 large eggs
1 cup milk
1 cup cream
3/4 cup sugar
1/4 tsp ground nutmeg
1/4 tsp cinnamon
1 tsp vanilla

Soak chopped mango in 1 cup "Boiling" water for 2 minutes, drain, set aside.

Heat oven to 350 degrees. LIGHTLY grease or spray a 13 X 9 glass baking dish.

Line baking dish with lightly buttered bread slices, arrange in several layers (I only put 2 layers) sprinkling chopped mango between each layer.

Beat eggs in a large bowl until light & foamy. Whisk in milk, sugar, nutmeg, cinnamon and vanilla until well blended.

Pour egg & milk mixture over bread. Press down gently with a spatula. Let stand for about 30 minutes, so the bread softens and absorbs some of the liquid.

Bake in 350 degree oven for 35 to 40 minutes or until the custard is set. Let the pudding stand for 15 minutes before serving.

** I usually serve Whip Cream or ice cream with this, but it is just as good as it is. Hope it becomes your Ohana's favorite.
