| Li Hing Mui Lollipops |

| These are the
same lollipops that are sold in Hawaii at Longs and other
fine stores. 2 c white sugar 1/2 c water 1/2 c light corn syrup 1 tsp oil flavoring (food coloring optional) Spray metal or plastic hard candy molds with non-stick cooking spray and place them on a flat cookie sheet or marble slab. Set aside. Combine sugar, water and corn syrup in a saucepan over medium heat. Stir until sugar is dissolved. Cook to hard crack, 300°F. Remove from heat, stir in food coloring and oil flavoring. Pour into greased molds, carefully, taking care not to burn yourself. Work quickly, as the syrup cools off fast! As soon as you are done pouring, quickly press a li hing mui seed into the center of each lollipop. (Start with the first one you poured out!) |
