Lomi Salmon 4 |

| 1 lb. salt
Salmon 1/2 lb. cherry tomatoes, diced 1 medium yellow onion, chopped 1/2 cup chopped green onions 2 Tbsps. water 1 cup crushed ice Soak the salt salmon after cleaning. Change the soaking water occassionally to drain off most of the salt. After 3 to 5 hours of soaking, remove all of the skin and the bones. Cut the salmon into smll pieces and place in a bowl. Add the diced tomatoes, yellow onion, green onions & 2 Tbsps. water. Toss gently. Chill. Just before serving add crushed ice. JMR NOTE: If salt salmon is unavailable, use fresh salmon filet and add salt to taste. For an added zip add 2 Hawaiian or Thai chiles finely minced. |
