Guava Jelly
Ripe guavas
White sugar
Sterilized jars
Lime juice

Wash guavas. Cut off ends and bad spots . Cut into quarters. Place in large pot and cover fruit with water. Cover pot and bring to boil . Boil for 2 hours. Leave overnight. Strain through cheesecloth. Do not squeeze . Liquid should be clear. Measure amount of liquid strained. Add 3/4 cup sugar for each cup of liquid. Add lime juice to taste. Cook to jelly point (until syrup forms a bead when dropped onto a plate). Skim off scum from top while cooking. Pour into hot sterilized jars leaving space at top. Seal.
