Chicken Long Rice 2
1 whole fryer or regular bag chix parts
2-3 rolls long rice
2 cloves garlic (crushed)
quarter-size ginger root (crushed)
salt & pepper to taste
shiitake mushrooms (optional)
water or 2-3 cans chix broth
green onions to garnish

Soak long rice and shiitake mushrooms in warm water for 15 minutes or when soft.

Brown garlic.

Boil chix in pot with water, filled just about covering chix, til tender.

Drain water and replace with chix broth, add remaining ingredients and simmer for 15-20 minutes stirring ocassionally.

Garnish with green onions.

Serve over hot rice.
