| Every time I
make this for a party or pot luck, it will be the one of
the first to disappear. If you're health conscious, you
can use the safflower or 1/3 of the cream cheese. 1 can chicken soup or chicken broth 1 cup chopped celery (two or three stalks) 1 cup chopped onions 3 cans (10oz.) chicken 2 (8oz.) cream cheese 1 cup mayo or safflower 2 packets knox gelatin Chop up the celery and onions (can add more if you want) and then set aside. In large pot put in the can chicken soup or broth along with the 2 cream cheese and mayo or safflower. Then add the 3 cans chicken. Bring to a boil. Stir in between til cream cheese and mayo or safflower are melted. Add the celery and onions and stir a few times. Turn stove off and let stand for 5 minutes. Add two packets of knox gelatin and stir a few times also. If you have a large gelatin mold it would really make it nice to serve in. If not, put in large container and put in frigerator to cool. Better if overnight. Eat with crackers or vegetables. You can substitute the chicken with tuna, salmon, or cornbeef. Makes for large gathering or parties or just for grinds! |
