Char Siu 6
2-1/2 lbs. boneless pork

Marinade:
1 Tbs. salt,
4 Tbs. shoyu
4 slices ginger, peeled
3 Tbs. honey, warmed
2 Tbs. white sugar
2 doves garlic, crushed
2 Tbs. rice wine or dry sherry
1 Tbs. five-spice powder
2 Tbs. hoisin sauce
pinch red food coloring

Basting:
2 Tbs. honey (warmed)

1. Cut pork lengthwise (~2" thk. & 8" long).

2. Mix marinade in large bowl or pan & add pork.

3. Marinate for 6 hrs. or overnight in refrigerator, turning occasionally.

4. Preheat oven to 400° F. & place a roasting pan filled w/ 1/2" of water on the base.

5. Place pork pieces flat on a wire rack set high in oven.

6. Roast 20 min.

7. Turn over & brushed w/ pre-warmed honey.

8. Continue to roast 15 min.

9. Turn & brush w/ honey again.

10. Roast another 15 min. (should have nicely charred edges).

11. To serve, slice finely thin across the grain.
