Char Siu 3
4 lbs. pork butt, cut into 5" x 3" x 2" pieces
2 Tbsp. Hawaiian sea salt

Marinade:
1 cup sugar
1/2 cup shoyu
2 Tbsp. honey
1 Tbsp. whiskey
1 tsp. red food coloring
1/2 tsp. Chinese 5-spice powder

1. Rub pork w/ Hawaiian salt & refrigerate 1 hr.

2. Combine marinade ingredients.

3. Soak pork in marinade in refrigerator 24 hrs. turning occasionally.

4. Place meat on a rack over 1/4" of water in a shallow roasting pan.

5. Roast 1-1/2 hrs. at 300° F.
