Cassava Cake
This is the best testing bibinka-like cake you won't forget. For those of you that don't like eggs, this cake will be for you. There are no eggs added into this recipe. It's so fluffy and naturally sweet without adding any sugar. While it's still warm, enjoy it with a cup of coffee or milk. It's easy to make.

2 packages of frozen grated Cassava
1 bottle sweet coconut (macapono)
1 can of condensed milk
1 can of coconut milk
1/4 cup of butter

Mix all of the ingredients in a mixing bowl and put in the oven for 35 minutes or until top is lightly browned. Bake it on 350 degrees.

** Look for the grated cassava, and macapono at your closest Asian store.
