Sloppy Joes à Nicole

Between the time that Chelle (my sister) had moved out to British Columbia and that I moved out there myself, one of our cousins came to live with my ex-husband and me. Nicole is Mom's youngest sister's daughter. And if you could follow that one, you should see how far I can really reach sometimes... *grin* Nicole is a wonderful person, and she possesses more of her mother's qualities than she realizes. A kind and generous heart, Nicole stayed with us for nearly a year. During that time, we had the chance to fill up our respective personal cookbooks. This recipe is one of my favorites, because it is so easy to make, and it's a little different from the one Mom makes. Oh, yeah.... here's her High School Graduation picture, from 1993.


  • 1 lb (450 g) Ground Beef (lean is preferable)
  • 1 medium Onion, chopped
  • 1 cup Ketchup
  • 1½ tablespoons White Sugar
  • 2½ tablespoons Vinegar
  • ½ teaspoon Celery Salt
  • 1 teaspoon prepared Mustard
  • 1 teaspoon Salt
  • ½ cup Cheddar Cheese, grated

    Brown ground beef and onions in a large non-stick frying pan. Add remaining ingredients, one at a time, and stir well after each one. Cover and simmer about 30 minutes, stirring often to prevent further sticking, until sauce sticks to meat and onions. Serve on hamburger buns, sprinkled with cheese.
