While working at the phone company, I came across this recipe. I think it was in Canadian Cooking, or something along those lines. I decided it sounded like something I could make, and something he might enjoy. So, I made it. It was good. Really. The cola in the recipe turns syrupy, and it adds a wonderful sweet flavour. Just one thing, though, and this is why I can't make it anymore... you MUST use a NON-aluminum pan, because of the cola. A glass pot works best, but I'm not sure if I can cook on top of the stove with my Corningware baking dishes...
In a non-aluminum sauce pan, melt butter over low heat. Add onions and garlic, and cook until onion
is soft, about 5 minutes. Add bay leaf, cola, ketchup, Worchestershire, mustard, vinegar, salt and
pepper. Simmer 1 hour, stirring occasionally to prevent burning.
Preheat oven to 350� F. Pour � cup of sauce in bottom of 13x9x2" non-aluminum dish. Arrange
chicken and spoon � cup more sauce over chicken. Bake 30 minutes. Turn chicken, baste and bake
another 30 minutes. Turn oven to Broil. Spoon � of remaining sauce over chicken. Broil until crisp,
about 4 minutes. Turn chicken over and spoon remaining sauce. Broil until crisp. Serve with white
rice or baked potatoes.
