Diabetic Cheesecake


Both my grandmothers are diabetic. Someday, I expect to be as well. Lifestyle changes have forced me to find different ways to make my favorite dishes. Mom made this recipe for my grandparents, after my grandmother returned from the dietician with this recipe. It's not as good as the original, but it is good, nonetheless. It isn't as sickeningly sweet, either, which is why it's one of my favorites. M�m� and M�m�re, this one's for you.
  • 1 cup Graham Wafers, crushed
  • 8 oz. Pineapple, unsweetened, drained (but keep juice)
  • 2 tablespoons Gelatin
  • � cup Water
  • 12 oz. Cream Cheese, softened
  • 2 Eggs, separated
  • � cup Skim Milk
  • 1 tablespoon Lemon Juice
  • 4 teaspoons Liquid Sweetener
  • 1 teaspoon Vanilla
  • 1/8 teaspoon (pinch) Salt

    Soften gelatin in some water. Add the � cup water to pineapple juice to make � cup. Bring to a boil. Add gelatin mixture. Combine cheese, milk, sweetener, lemon juice, vanilla, salt, egg yolks and fruit. Add gelatin mixture, let stand till thick but not set. Stir in stiffly beaten egg whites. Pour half the wafers in bottom of pan. Pour mixture and top with remaining crumbs. Chill in refrigerator for 2 hours.
