Chocolate Chip Cookies

When I moved out from my parents' house, Mom made me a small gift... a little grey box filled with favorite family recipes. Everything from Sweet & Sour Ribs, to these Chocolate Chip cookies was in that little grey box. She had typed out the recipes on little cue cards, and organized them for me already. Most of the recipes I knew by heart... including this one. But now that I don't have time to cook or bake like I used to, I realize I've forgotten many of these recipes.
The beauty with Chocolate Chip cookies is that from family to family, there are small variations to either the mesurements or additions to this basic recipe. This is just my family's basic recipe... personally I liked it best when Mom would add Smarties instead of chocolate chips.
  • cup Shortening
  • cup White Sugar
  • 1 teaspoon Vanilla
  • 1 Egg
  • teaspoon Baking Soda
  • teaspoon Salt
  • 1 cup Flour
  • cup Chocolate Chips

Preheat oven to 375 F. In a large bowl, cream shortening with a fork, add sugar then vanilla and egg. Mix well. In another smaller bowl, mix baking soda, salt and flour together, then add to shortening mixture. Mix well. Batter will be a little stiff. Add chocolate chips. Drop by spoonfuls onto a cookie sheet about 2" apart. Cookies turn out better if they're not formed into a ball, but left in a glob on the cookie sheet. Bake 8 minutes, let cool then gently remove from pan. Cookies freeze well for about 8 months to a year.
