Boiled Icing

Some of my favorite family stories come from my father's mother. Mèmère has told me countless times of my father's love of chocolate cake with boiled icing. Apparently, during his teens, back in the 50's, Mèmère was expecting company for supper, and had made a chocolate cake for dessert. While the company visited, Dad had made an appearance with 3 of his buddies. They saw the cake sitting on the countertop, and convinced my father to ask if they could have some. Dad agreed, and Mèmère had told him that each of them could have ONE piece. And they did.... they cut the cake into 4 equal pieces, and each had just ONE piece. Needless to say, when Mèmère found out... *grin* Like I said, it's one of my favorites. Oh, yeah... don't be too upset if this recipe doesn't work the first time you try it. It's very delicate and timely, so don't be doing anything else when you make it. Trust me on this one....


  • 2 Egg Whites, beaten stiff
  • ¼ cup Water
  • 1 cup Brown Sugar
  • 1 tablespoon Corn Syrup
  • Dash of Salt

    Combine all ingredients EXCEPT eggs. Cook in a saucepan on low heat to a boil. When mix is stringy, add egg whites. Mix until stringy again. Take one teaspoon of icing and dip it into a cup of cold water. If icing forms a ball, it is done. Spread over cakes. Especially tasty with chocolate cake.
