Arrowroot Squares

When Mom would find a dessert that Dad liked, she kept it and made it her own. Dad has a sweet tooth, and Mom has always known how to ease it. Every Christmas while I was still home, I remember breaking up the cookies for the recipe, and having to make a double- and sometimes a triple-batch, because Dad would get into it before we could freeze it all for the holidays. It is one of the best desserts I know... and one that always brings back the warmest of memories. This classic recipe is still written on the backs or sides of the Arrowroot Cookie box, but for a long time, every box I had bought didn't have it. So, for those times when the recipe isn't there, here are Arrowroot Squares.


  • 30 to 40 Arrowroot Cookies, broken into small pieces (but not into crumbs)
  • 1 cup Walnuts, chopped (optional)
  • 8� tablespoons White Sugar
  • � cup Butter or Margarine
  • 2 Eggs
  • 4 tablespoons dried Cocoa
  • 1 teaspoon Vanilla
  • Pinch of Salt
  • Chocolate Icing (Betty Crocker brand Frosting works well)

    In a double-boiler, combine sugar, butter, eggs and cocoa. Cook to a sauce. Add vanilla and salt. Mix in cookies and pat down in 8"x8" pan. Before it cools, frost with icing. Let cool, then keep refrigerated. Cut into squares and serve. Freezes well for approximately 4 months.
