Burnett Steaks

1) Start out with Rib eyes or New York Strips for your steaks. Cheaper steaks will be tougher, no matter what you do to them. If you have Rib eyes or NY strips, you do NOT tenderize them with a hammer, just put them into a zip lock bag.

2) With the steaks in the Ziploc bag, mix 1/2 cup Soy Sauce & 1/2 cup whiskey with

1/2 tsp garlic powder
1 tsp ground coriander seed
1 1/2 tsp salt
1 tsp dill weed
1 tsp paprika
1 tsp cayenne pepper
1 tsp ground black pepper

Or with (this is much easier than the above)

enough Montreal Steak Seasoning to cover the tops of the steaks.

You can add a little (1/8th cup) Worcestershire sauce for variety, or teriyaki sauce to make it a little sweeter as part of the marinade. You can also water it down with beer if this is too strong.

3)Squeeze out the air from the bag.  This allows maximum coverage of the steaks, with minimal marinade. Let the steaks marinade in the bag for 15 minutes up to 8 hours. I like them best if you use a little teriyaki & a can of beer & wait the full 8 hours. This makes for tender steaks that are flavored throughout.

4) Heat up your gas grill for 15 minutes on "preheat", or your charcoal grill until the coals are red hot. It is important to have a hot grill initially. This is what creates the nifty black grill marks.

5) Place the steaks on the grill, shut the lid & turn the grill to off, or low. You want the steaks to actually cook on low heat, but to get the sear marks from your preheated rack. Start timing the steaks.

6) After 1.5 minutes, open the grill, turn the steaks over, & shut the lid. When you turn them over, try to place them into an "empty" spot on the rack. If you place them directly back into the same spot, then you will not get the nifty black marks.

7) After about 6.5 more minutes, your steaks will be done to a little past medium rare. This is how I love them. The more you cook them, the more chance that they will not be tender. Although these steaks should stay tender even into the "well done" stage if you marinated them long enough & chose good cuts of meat.

8) serve & eat immediately! YUM!
