| Recipe of the Week BANANAS FLAMBE Ingredients 4 ea banana, peeled 1/2 cup granulated sugar 1 tbsp unsalted butter 2 tbsp apricot preserves 2 tsp water 1/4 cup bourbon 2 cup French vanilla soft serve ice cream Preparation Steps Estimated Time: 25min 1 Slice bananas in half lengthwise. 2 Coat bananas well with sugar. 3 Melt butter in a large saute pan over medium-high heat. Add bananas and cook until dark brown, about 3 minutes on each side. Cook the bananas quickly to keep them firm. 4 Transfer bananas to a serving dish; keep warm. Combine apricot preserves and water over medium heat. Cook, stirring constantly, until thickened. Remove pan from heat, add bourbon, and return to the heat. Just as sauce begins to bubble, remove it from the heat. Ignite sauce with a match and pour over bananas and ice cream. Serve at once.
