Walnut Skordalia (Dairy)

Skordalia is a pareve Greek dish traditionally made with mashed
potatoes, olive oil and crushed garlic blended together and served
with fish, fried zucchini or aubergines slices.
This is a lighter, dairy summer version, ideal as a dip for crudities
or to be served with pita bread or on crackers.

250g/8fl Mayonnaise or Soy Mayonnaise
2 garlic cloves, chopped
50g/2oz chopped walnuts
25g/1oz breadcrumbs or Matzo meal
30ml/2 tbsp Greek yoghurt
Juice of 1/2 lemon
15 ml/1 tbs toasted sesame seeds
2 tbsp chopped fresh basil

Put all the ingredients into a blender or food processor and puree
until smooth.
Pour into a bowl and chill.
Arrange vegetables (small cauliflower florets, celery sticks, carrot
strips etc) on a serving plate and place the bowl in the middle.

You canreplace half of the Mayonnaise with Greek yoghurt, which
makes it lower in calories and more elegant in taste.
