| OFF SUM - SUM Sesame Fried Chicken (Yemen) (6 skinless chicken breasts 70g/2-1/2 oz sesame seeds 70g/2-1/2 oz plain flour 1 teaspoon salt freshly ground black pepper 1 teaspoon paprika 1 large egg 3 tablespoons oil, for frying Trim any fat from the chicken pieces and dry with kitchen paper. Coat the chicken pieces lightly in the mixture, shaking off excess. Beat the egg and water in a shallow bowl. Dip the chicken into the egg mixture, then coat again with the sesame seed mixture. Place the chicken on a tray, cover and refrigerate for 30 minutes if time permits. Preheat the oven to 180C/350F/gas mark 4. Heat 5mm/1/4-inch of oil in a frying pan over a medium heat. Add the chicken and shallow fry for 2 minutes on each side until light golden brown-take care not to brown the coating. Arrange the chicken in a single layer in a baking dish and bake for about 25 minutes until cooked through. Serve hot.
