Potato Walnut Latkes


2 tbsp. margarine
1 tbsp. oil
3 potatoes, boiled
3 eggs
1 cup chopped walnuts
Salt and pepper
Place margarine in frypan wirh oil and heat well. Meanwhile, mash the
potatoes. Add the eggs and walnuts and salt and pepper and mix well.

Fry in patties in hot fat until well crusted and golden. Turn over
and fry until other side is crusted also. They are wonderful, and
especially children love them.

Yield: serves 4
