CREAMY PECAN PESTO (Microwave)


Prep: 5 min, Cook: 10 min.

1 cup pecans, coarsely chopped
2 Tbs. unsalted butter
1 clove garlic, minced
1-1/2 cups whipping cream
1/4 cup grated Parmesan cheese
3/4 cup fresh basil, minced

Combine nuts and butter in a microwave safe bowl. Microwave 2-3
minutes on high, uncovered, or until nuts are toasted. Stir in
garlic, cream and Parmesan and microwave 2-3 minutes on high,
uncovered, or until thickened. Stir in basil and serve immediately.
