Oatmeal Waffles

2 cups milk
2 cups oatmeal
1/2-cup flour
2 teaspoons baking powder
1/4-teaspoon salt
1-teaspoon sugar
2 eggs separated
1/4 cup
Butter, melted

Bring milk almost to a boil. Add oatmeal (preferably rolled oats).
Let stand until cool (about 1 hour) stirring occasionally.
Mix together, flour, baking powder, salt, and sugar.
Beat the whites until stiff peaks form.
Beat egg yolks in mixer.
Add butter and mix; then add cooled oatmeal mixture.
Add dry ingredients. Lastly, by hand, fold in beaten egg whites.
Pour bitter in hot waffle
iron.

Optional: add a bit of oat bran or wheat germ to oatmeal mixture for more texture and flavour. In addition, sprinkle waffle batter (before closing iron to cook) with 1-tablespoon sunflower seeds for an excellent "nutty" flavour.
