Lentil Tomato Sauce (Parve/vegan)

Serves 4

Ingredients --
1 pinch red pepper flakes 
salt, pepper, and sugar to taste 
1 tsp. dried basil 
1 tsp. dried oregano 
3 garlic cloves, minced 
2 tsp. olive oil 
1 medium carrot, thinly sliced 
1 medium onion, diced 
1 (28 oz.) can peeled whole tomatoes, crushed 
1 cup brown lentils 
 
Heat oil and saute carrots, onions, and garlic over medium heat for 5 minutes.  

Add tomatoes, basil, oregano, and lentils. 

Simmer over low heat for 40 minutes,  adding water if sauce gets too thick. 

Season to taste. 

This sauce is excellent with whole-wheat spaghetti.
