| Kousmeri (Romianote Cheesecake)
- Dairy This is a cheesecake from Ioannina (Greece), to be served on Shavuoth. 2 lbs. soft white unsalted cheese: farmer's cheese or a bland feta 4 eggs 3/4-cup sugar 1 1/2 cups flour 6 tbsp sweet butter, melted A well-chilled syrup, see below Make the syrup first: 1-cup water 1/4-cup honey 1/2-cup sugar Juice of 1 lemon Boil together until you have syrup that will coat the back of a wooden spoon. If you wish, you may add the juice of 1 lemon shortly before removing from the heat. Chill well. Preheat oven to 350F (180C). Mash the cheese in a large bowl until creamy. If it is too thick, add a little yoghurt. Add the eggs, sugar, and flour, and beat well. Then, add the melted butter and stir in well. Pour into a buttered 9x12-inch baking pan and bake at 350F/180C until brown, about 30 minutes. Remove from the oven and immediately pour over it the well-chilled syrup. Serve cold, cut into squares.
