| Eggs And Potato Country Breakfast
1/2 cup chopped onion 1 sweet pepper, chopped Vegetable spray 1 pound fat-free hash browned potatoes,frozen, shredded 12 egg whites 2 egg yolks 1/2 cup skim milk 1/4 teaspoon freshly ground black pepper 1/4 teaspoon salt 2 ounces lowfat cheddar or mexican blend cheese, shredded (Kosher) 2 ounces fat-free cheddar cheese, shredded (Kosher) Saute onion and green pepper in nonstick pan, coated with some vegetable spray, if needed. Add potatoes. Cook over medium heat until potatoes are browned on each side, about 15 minutes. Spray a 9" X 13" glass dish with vegetable spray and put potato mixture into the dish. Beat eggs lightly with milk, pepper and salt and pour over potato mixture. Sprinkle cheese on top. Bake uncovered at 350 degrees F ( 180 C)for 45 minutes or until done. Serve hot.
