Greek Peasant Salad (Choriatiki Salata)


3  radishes
4  tomatoes, thinly sliced
8 slc cucumber
1/2  green pepper, finely chopped
2 lettuce leaves, thinly shredded
2  scallions, thinly sliced
1 onion, thinly sliced
4 tsp chopped parsley
4 tsp chopped mint

Dressing:
1/2 tsp oregano
3 1/3 tbl olive oil
4 tsp cider or wine vinegar
4 oz Feta or other white cheese,
    cut into small pieces
12 to 18  x black olives Kalamatas


Place washed and prepared salad ingredients in a bowl.
Mix dressing ingredients thoroughly and pour dressing over the salad. Mix gently with a wooden serving set. Add the cheese and the olives.

Serves 2
