| Chickpea And Sweet Potato Koftas
1 medium-sized sweet potato 2 cups cooked chickpeas (1 x 15 ounce can) 2 scallions, cut in 1- inch pieces 1 teaspoon cumin 1 teaspoon ginger 1 teaspoon salt 2 tablespoons lemon juice Black pepper, to taste 6 tablespoons flour 1 cup peas (fresh or frozen) Oil for frying Peel and cube the sweet potato and steam, boil or microwave it. Put all the ingredients except the flour and peas into a food processor and puree. Mix in the flour and add the peas. Form patties and fry on both sides till golden brown.
